Animal oleic acid is light yellow transparant liquid.The acid value is (mg/g)190-202,the iodine value(Ig/100g) 80-100 and the saponification value (mg/g)195-205.It mustn't be mixed with acid-base ant from heat and fire. In animal cells, oleic (18:1, n-9) acid is created by the dehydrogenation of stearic acid. Oleic acid is further elongated and desaturated into a family of n-9 fatty acids. Historically, oleic acid and its precursors have been provided to cells in culture as components of serum, albumin or esterified to molecules such as cholesterol. Oleic acid is poorly soluble in aqueous media and susceptible to peroxidation. The advent of serum-free, animal-protein-free and protein-free media formulations has increased the difficulty of delivering oleic acid to cells in culture.
